Nero di Seppia is the dark liquid secreted by cuttlefish; by extension we can mean the liquid secreted by other cephalopods (octopus, squid).

It is freed from a special bag (located between the gills) and dispersed with the aid of a jet of water emitted from the siphon. The dark color is due to its main constituent, melanin.
In the past it was used as ink, today it is mostly used as premium condiment: in Italian cuisine it is mainly used for pasta-based first courses, in particular in Sicilian cuisine and for squid ink risotto in Venetian and Tuscan kitchens.
