The Ligurian Riviera is known worldwide for its olive oil production.
In particular, the Taggiasca olive has significantly contributed to placing Ligurian olive oil at the top of global standards.
Each Ligurian province has therefore worked to ensure that its local production receives the DOP (Protected Designation of Origin) certification, according to specific regulations.
To date, our region has three different DOPs: the DOP of the Riviera del Ponente Savonese, which includes Olio Polla, the DOP of the Riviera dei Fiori, and the DOP of the Riviera di Levante.
Three different products, with three different regulations.
The Polla DOP oil is obtained
from the artisanal, cold-pressed process in a DOP-certified mill, using the finest olives sourced exclusively from the province of Savona.
The main cultivars found in our area, and therefore in our DOP, are: Taggiasca, Colombina, Pignola, Carparina, and Mortina.
Oleificio Polla introduced this Protected Designation of Origin oil to fully satisfy the needs of consumers who prefer an oil with a very sweet and delicate flavor, with hints of artichoke and pine nuts.
It is recommended for use raw or in all fish-based preparations and in dishes where the oil must perfectly complement the flavors of the ingredients.
