“La Saba” condiment is obtained by slowing cooking fresh Trebbiano grape must over a low open flame at around 600C for several hours until the liquid turns a dense shiny amber colour. La Saba is a traditional product of the Emilia countryside. Children would use it as a syrup to flavour bowls of snow and poor peasant families would flavour polenta with it.
The slow processing of the dough between the 100% Italian semolina and the pristine water of the Lattari Mountains, where the Acqua della Forma flows, together with the bronze dies, give our pasta a unique consistency and a rough surface capable of capturing the sauces and transforming each dish into an explosion of sensorial emotions.
