The fragrant aroma of Tuscan Ham is characterized by hints of berries and herbs that enhance the natural scent of the meat and make it the excellent product of the combination of Tuscan air, wisdom and nature.
The thighs, weighing no less than 11 kg, are refrigerated for a day and salted. In addition to salt, pepper and natural aromas of vegetable origin typical of the area are used such as mastic, myrtle, juniper. After salting, it is washed and then greased, part of the thigh is coated with a mixture of lard, flour, salt and flavorings.
The seasoning, which lasts at least 12 months, takes place at a controlled temperature. The finished product weighs between 8 and 9 kg.
Cut is compact, red, with a layer of white subcutaneous fat tinged with pink.
Its flavor is delicate but with a certain flavor that distinguishes it from the hams of northern Italy.
In the northern regions, in fact, the low winter temperatures allow the pork
butcher to use more modest quantities of salt than in the center-south.
