To obtain the meltiness that we all expect, the cheeks, after being well browned, must cook for a long time, over a very low flame, only in this way will they melt in the mouth once ready. We have chosen to accompany this second course with a creamy mashed potato, made quickly, only with extra virgin olive oil and without milk. Find out how precious and delicious this slightly unusual cut of meat can be!

Beef Cheek & Sauce / Mashed Potatoes – Bag-in-Bag or Vacuum Bag Method:
Do not open the vacuum bag — keep it sealed.
Bring a pot of water to a gentle simmer and submerge the sealed bag. Heat for 10 minutes, moving the bag occasionally for even warming. Once hot, remove and gently massage the bag to mix the contents, then open and serve.
Tips: If reheated too quickly or at high heat, the butter and milk in the mashed potatoes can separate.

Ensure the beef cheek and mashed potatoes are fully hot before serving. Do not leave at room temperature for extended periods. Reheat and enjoy immediately.
