Tender veal shanks slowly braised in a rich and aromatic sauce of tomatoes, onions, carrots, celery, white wine, and traditional Italian herbs. Served with the classic gremolata and perfect to pair with creamy mashed potatoes, this iconic Milanese dish brings authentic Italian comfort and flavor to the table.

INGREDIENTS

Veal shank, tomatoes, onion, carrots, celery, garlic, white wine, butter, olive oil, parsley, seasoning.

HEATING / COOKING

Option 1 – Stovetop:
Open the bag and pour the veal and sauce into a pan. Gently reheat over low heat for about 10 minutes, stirring occasionally, until the veal is tender and thoroughly heated. You may need to add half a ladle of broth or water during reheating to prevent the dish from drying out or burning.

Option 2 – Bain-marie (water bath):
Place the sealed bag into a pot of hot water (steaming, just below boiling) and heat for about 20 minutes. The water must be hot enough to keep the food out of the danger zone: do not use lukewarm or merely warm water. Once heated, open the bag and serve immediately.

Mashed potatoes (optional side dish)
Method: simmer in water (bag-in-bag or vacuum-sealed bag):
Do not open the vacuum-sealed bag; keep it sealed. Bring a pot of water to a gentle boil and immerse the sealed bag. Heat for 10 minutes, moving the bag occasionally for even heating. Once hot, remove and gently knead the bag to mix the contents, then open and serve.

Tips:
If reheated too quickly or over high heat, butter and milk may separate.

Food safety reminder:
Make sure the veal and side dishes are piping hot before serving. Do not leave food too long at room temperature or in water that is not sufficiently hot, as this may create unsafe conditions. Reheat and enjoy immediately.
