The Taggiasca olive is the cultivar par excellence of the Western Ligurian Riviera,
present in the Imperia hinterland, in the Oneglia Valley,
in the Dianese area, where the best olives grow.
It is in these areas that the Polla family selects the olives that have
reached the perfect ripeness, which are hand-picked and pressed within
24 hours in the ancient stone mill. The oil, after decanting
in steel tanks, is filtered with paper filters to maintain all the
organoleptic characteristics of the product and allow for perfect
preservation; it is slightly fruity, sweet, digestible, and low in
acidity. It enhances flavors without altering them.
