Elegant and highly effective: Sunflowers with porcini mushrooms are a delicious first course, perfect for Sundays or holidays. For this recipe, fresh homemade sunflower is prepared with a ricotta AnticaLuna and Parmesan filling. Simple fresh egg pasta that contains a creamy ricotta filling: homemade ravioli just like grandma's, rolling the dough by hand or with a pasta machine, in more modern times! For the sauce, the porcini mushrooms are sautéed in a pan with garlic and oil and then, before serving, some flakes of Parmesan are added.
The dressing is very simple, without cream, with a drizzle of extra virgin olive oil to enhance the flavour. It is a fantastic first course, you could include it in the Christmas lunch menu. You could also add prawns to the mushroom sauce, as in the prawn and mushroom ravioli!
