Tortelli with pumpkin and amaretti biscuits, a very special and different form of fresh pasta. If you know Mantovan tortelli, you will know that they are made with a filling of pumpkin, amaretti biscuits and only apple mustard. Since I still haven't been able to find that particular mostarda, but I still wanted to try the pumpkin and amaretti combination, I tried my hand at preparing these pumpkin and amaretti ravioli and I must say that the result was exceptional! Topped with butter, sage and parmesan, they gave their best on my plate!
