Montasio

Montasio is a traditional Italian cheese named after the Montasio mountain range in the Friuli region, north of Venice. Its origins date back to the 13th century, when it was first produced by Benedictine monks in the Julian Alps. Today, Montasio is still crafted in its native area, with production limited to Friuli Venezia Giulia, Eastern Veneto, and specific provinces such as Belluno, Treviso, Padua, and Venice.

Montasio has earned PDO (Protected Designation of Origin) status, ensuring it is produced under strict regulations. The Consorzio per la Tutela del Formaggio Montasio guarantees quality and authenticity by branding the cheese with its official mark directly on the rind.

Originally made from sheep’s milk, Montasio is now produced exclusively with fresh cow’s milk, following carefully monitored methods. It is highly digestible, making it suitable for all ages, from children to the elderly.

Montasio is appreciated at every stage of aging: delicate and milky when fresh (2 months), flavorful and balanced at mid-maturity (5–10 months), and bold, complex, and full-bodied when aged for more than 10 months.
